Italian-Spiced Eggs in Tomato Sauce with Ricotta

When Italian households like mine get collectively for reunions, a giant breakfast begins the celebration. It’s one thing like this dish-cooked eggs buried underneath a blanket of wealthy, spiced-right tomato sauce. This recipe works effectively for brunch, too.
2 tablespoons extra-virgin olive oil

2 cloves garlic, minced
1 ½ teaspoons dried oregano

2 cups crushed canned tomatoes

1 cup whole-milk ricotta cheese
2 tablespoons chopped recent parsley, for garnish
